Lemon Bars-Alliyah

2 sticks butter, softened

2 c. flower

1 c. powdered sugar

Blend in mixer and pat in a 9×13 pan.  Bake at 350° for 15 minutes.

 

4 eggs

2 c. sugar

½ c. flour

½ c. lemon juice

Beat together all ingredients and pour over crust.  Bake at 350° for 20-25 minutes.  Sprinkle with powdered sugar and cool before cutting into squares.

Tips:

  • Use a strainer to sprinkle the powdered sugar onto the lemon bars.

Red Velvet Crinkle Cookies-Malie

6 tablespoons butter

1 cup powdered sugar

1 teaspoon cornstarch

1 box Duncan Hines Signature Red Velvet cake mix

2 large eggs

1 teaspoon lemon zest

Directions-

Preheat your oven to 375°F.  Melt butter; set aside to cool.  Place powdered sugar and cornstarch in a shallow dish.  Mix with a fork to blend.

Place cake mix, cooled butter, eggs and lemon zest in a large mixing bowl.  Mix by hand until well blended and dough forms.  Form dough into 1-inch balls and roll in powdered sugar.  Place on cool, ungreased baking sheets about 2 inches apart.

Bake one sheet at a time, in center of oven for 9 to 11 minutes or until set.  Cool 1 minute.  Transfer to wire rack to cool completely.  Store in airtight container with wax paper or parchment separating layers.

TIPS: For consistency, use a small scoop (1 to 1 ¼ inches in diameter) to form dough into balls.

For best results, bake only one sheet of cookies at a time.  If two are baked at once, rotate sheets midway through baking.

Chocolate Chip Cookies-Canaan

Ingredients

–      2 cups chocolate chips

–      1 teaspoon salt

–      1 cup [2 sticks] softened butter

–      ¾ cup granulated sugar

–      ¾ cup packed light brown sugar

–      1 teaspoon vanilla extract

–      2 eggs

–      2- ¼ cups all-purpose flower

–      1 teaspoon baking soda

Directions

-Heat oven to 375 degrees Fahrenheit

-Beat butter, granulated sugar, brown sugar and vanilla in a large bowl with mixer until creamy. Add eggs, beat well. Stir together flour, baking soda and salt, gradually add to butter mixture, beating until well blended. Stir in chocolate chips.

-Drop by teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until lightly browned. Cool slightly, remove from cookie sheet to wire rack. Cool completely.

Olive oil dipping sauce-Kainalu

Ingredients
1/4 cup garlic salt
1/4 cup black pepper
1/2 Olive oil
1 loaf French bread
1 stick butter (optional)

Instructions
Pour olive oil on plate, sprinkle spices on. slice bread then dip it in. Put bread on butter if wanted.

Portuguese Bean Soup-Kamalei

Ingredients

  • 1 can of chicken broth (50 ounces)
  • 1 quarter pound bacon
  • 1 quarter pound ham
  • 4 teaspoons garlic
  • 32 ounces kidney beans
  • 15 ounces tomato sauce
  • 5 ounces tomato paste
  • Three russet potato’s cubed
  • ½ cup onion
  • 2 medium carrots diced
  • 2 cups rice
  • 4 ounces Portuguese Sausage
  • 2 tablespoons fresh ground pepper
  • 2 tablespoons salt

Directions

  • Put all ingredients in pot
  • Cook on medium high until boiling
  • Lower heat to low
  • Let simmer for one hour

Guri Guri Ice Cream-Malie

Ingredients:

3 cans soda (I used 2 cans flavored soda and 1 7up)

1 can sweetened condensed milk

Prepare:

Mix together, freeze, and mix in between freezing.  Freeze for about a day and a half.

Tips:

You can also try orange or root beer soda.

Italian Pasta Salad-Paris

2 (12 oz.) box of uncooked pasta (tri-color rotini preferred)

1 green pepper, and/or 1 ½ c. broccoli

1 red pepper, and/or 1 c. cherry tomatoes

1 small can of sliced olives

¼ lb. of circular sliced salami

1 (16 oz.) bottle of Italian Dressing (any brand you like)

¼ c. shredded parmesan cheese, to be sprinkled on at the end

 

Directions:

1.)   Cook pasta as directed on the box

2.)   Slice green and/or red pepper into thin 1” or shorter lengths, or dice

3.)   If you choose to use broccoli, cut into bite sized pieces, then blanch and cool in ice water

4.)   If you choose to use cherry tomatoes, cut into halves

5.)   Slice dry salami circular pieces into thin (about ¼ inch) strips

6.)   Mix all ingredients into a big bowl

7.)   Add Italian dressing to taste

8.)   Add salt and pepper to taste

Oreo Brownies-Aulii

Ingredients:
4 squares bakers chocolate (can use 12 Tbsp. cocoa instead)
¾ cup butter
2 cup sugar
3 eggs
1 tsp. vanilla
1 cup flour
1 bag mini Oreo cookies ( can use full size Oreos)

Preheat oven to 350 degrees

Microwave chocolate and butter until melted. Stir together completely.
Stir sugar into mixture. Mix in eggs and vanilla until well blended. Stir in flour and nuts.
Spread half of the batter in a greased 9×13 pan. Layer Oreo cookies over batter. Top with the other half of the batter to cover cookie.
Bake for 30-35 minutes.

Oatmeal cookies-Kainalu H.

Ingredients-
2 blocks butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick oats

Directions

In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Fried Rice-Micah R.

Ingredients-

1 lb. bacon- cut into 1 inch pieces
1 can Spam- cube-sized pieces
1 Portuguese sausage- sliced
6 eggs
Kikkoman shoyu
Oyster sauce
Green onions-chopped
3 cups cooked rice

Directions-

Cook rice. Fry bacon, spam, and portuguese sausage separately and drain on paper towels. Scramble six eggs and season with salt and pepper. Add cooked rice to the pot. Add in shoyu, oyster sauce, and pepper to taste. Mix well. Add in other ingredients and enjoy!
