Holiday Fudge Bars-Kau’i

Ingredients

– 2 cups uncooked quick-cooking oats

– 1-1/2 cups all-purpose flour

– 1 cup chopped pecans

– 1 cup firmly packed light brown sugar

– 1 teaspoon baking soda

– 1/4 teaspoon salt

– 1 cup butter or margarine, melted

– 1-1/2 cups red & green candy-coated chocolate pieces, divided

– 1 (14-ounce) can sweetened condensed milk

Directions

1.       Combine first 6 ingredients and stir well.

2.     Add butter and stir at a low speed with an elecrtic mixer untill mixture is crumbly.

3.     Reserve 1 1/2 cups crumb mixture

4.     Press remaining crumb mixture into a lightly greased 13×9 inch pan

5.     Bake at 375 for 10 minutes

6.     Cool on a wire rack

7.     Reduce oven temperature to 350

8.     Place 1 cup chocolate pieces in a microwave-safe bowl

9.     Microwave at HIGH 1 to 1 ½ minutes, stirring after 30 seconds

10.  Press chocolate pieces with the back of a spoon to mash them

(the candies will almost be melted with pieces of color coating still visible)

11.   Stir in condensed milk

12.  Spread mixture evenly over crust in pan, leaving a ½ inch border on all sides

13.  Combine reserved 1 ½ cup chocolate pieces

14.  Sprinkle evenly over chocolate mixture & press lightly

15.  Bake at 350 for 25 to 28 minutes or until golden

16.  Cool in pan on a wire rack

17.  Cut into bars

Helpful hints for this recipe

This Holiday Fudge can be decorated with different m&m colors depending on the holiday, occasion, or season, or you could just use the regular m&m colors. You can also eat this dessert warm or cold. Just remember to put it in the refrigerator and if you want to eat it warm, just heat it in the microwave.

Strawberry Crush Cake-Lauren

Ingredients

– 1 Box of Duncan Hines Strawberry Cake Mix

-1 cup of Strawberry Soda

– 4 eggs

– 3/4 cup of Crisco or Wesson Oil

– 1 (3 oz.) Vanilla Instant Pudding Mix

Glaze:

– 1 cup of powdered sugar

– 2 tbs. of strawberry soda

Directions

Mix all ingredients together.  Pour into a greased and floured 9″ x 13″ pan.  Bake at 350º for 35-40 minutes or until you can stick a toothpick in the cake, and it comes out clean.

Glaze: Stir ingredients together.  Glaze can be put on when cake comes out, or when cake is partially cool.

Snowball Cookies – Emily

Ingredients

1 cup butter

1/2 cup powdered sugar

1 egg yolk

2 1/2 cups flour

2 tsp. vanilla

Powdered sugar for rolling cookies in

1/2 cup minced nuts (optional)

Directions

1. Mix butter and powdered sugar in a bowl until smooth.

2. Add egg yolk and vanilla and mix until you can’t see them anymore.

3. Add flour, mix thoroughly.

4. Add nuts if you want and mix well.

5. Roll into 1″ balls and bake on ungreased cookie sheet at 350 degrees, for 8 to 10 minutes, or until the cookies are lightly browned.

6. Roll the cookies in the powdered sugar while they are still warm.  Makes 4 dozen.
