Poached Pear with Aborio Rice Pudding

 

1 ½ cup sugar
1 ½ vanilla bean
4 Anjou pears peeled
1/3 cup Arborio rice

 Salt

2 cups milk

2 tbs. heavy cream

½ c finely chopped pistachio nuts

 Combine 8 cups water, 1 ¼ cup sugar vanilla bean and pears in a pot. Cover with parchment. Bring to a simmer and cook partially covered, turning occasionally.

 Serves 4

Combine ¾ cup water, rice and pinch salt in pan. Bring to a simmer and stir until water is mostly absorbed, Add 1 cup milk and

 remaining vanilla return to simmer and cook until liquid is mostly absorbed then add remaining ¼ cup sugar and remaining 1 cup milk.

 Cook until liquid is absorbed. Remove from heat and add cream.
